The class was at Comedor Zarigueyas, a community space run by women who work together to build food security for children in the Guadalupana community.
When the students arrived at the dining room, a group of mothers were waiting for them with all the necessary ingredients. Quickly, everyone dedicated themselves to doing something, there were those who chopped the cabbage, the lettuce, others shredded the turkey, there were also those who learned to make tortillas and to season the habanero chili sauce. The beans were mashed, the onion, cucumber, tomatoes, beets, carrots were chopped, the juice was extracted from the green lemons, the avocados were sliced and the tortillas were browned.
The homey place stood out with the table full of colors and flavors when it was time to eat together. The recipe was shared by one of the mothers of the family, a seller of panuchos and salbutes, an expert in their preparation and which undoubtedly proved to be the best, because they were delicious.
Finally, everyone also collaborated in picking up and cleaning the place to return home, thus ending another incredible day of this student immersion experience in Merida.
